Hot smoked salmon
Sustainibly farmed Scottish salmon is marinated in a wet brine including soya sauce, vinegar & garlic. The salmon is then hot smoked in a traditional smoker. Once cooked the flames are extinguished with very fine oak dust which stops the cooking process and adds that delicious hot smoked flavour. Delicious whole smoked loin of pork. Its full of flavour, juicy and easy to carve. There’s no bone, so no wastage and will serve 3-4 people. £8/300g Code SKR
Pair of smoked kippers
